Chicken Breasts wrapped in Serrano Ham with Honey Glaze

Pollo con Jamón y Miel

This is a favourite with children.  It requires a little time to wrap the chicken breasts, but the result is quite fancy.

Serves 6

6 boneless chicken breasts, skin removed
6 slices of Serrano ham – medium thickness
¼ cup / 60 ml sherry
Juice of one lemon
3 Tablespoons honey
½ cup / 125 ml water

Preheat the oven to 350 F / 180 C.

Wash and dry the chicken.* Wrap the chicken breasts with a slice of Serrano ham, tucking the ham under the breast and placing each chicken breast in a medium sized covered oven-proof casserole.

In a small casserole or in the microwave oven, heat the sherry, lemon juice, honey and water so that the honey is dissolved.

Pour the sherry, water, honey and lemon juice over the chicken breasts. 

Bake covered for 20 minutes at 350 F / 180 C.  Uncover and bake for another 10 minutes. If you are using bone in chicken breasts the cooking time will be slightly longer

Drain of the juices from the pan into a saucepan and reduce to ½ cup. Serve the chicken breasts with the sauce.

* Serrano ham will give this dish sufficient salt.  Prosciutto ham may also be substituted
