Baked Fresh Cod with White Wine Sauce

This is a quick dish that can be dressed up or down depending on whether you are cooking a meal in a hurry or for a special evening. Fresh frozen cod from your grocer can make it easy to eat fish more often.
Generous 2 lbs / 1 kg cod filets
2 Tablespoons olive oil¼ cup / 60 ml olive oil
1 leek, diced
3 cloves garlic, cut in 4 pieces
2 tbsp chopped parsley2 tbsp flour
½ cup / 125 ml water
½ cup / 125 ml white wine
Preheat the broiler on high. Drizzle the 2 tbsp olive oil in a glass baking dish.
Heat the remaining ¼ cup / 60 ml olive oil in a saucepan. Sauté the leeks, garlic, and parsley until the leeks are translucent. When the leeks are soft, add the flour and continue to stir until the flour is bubbling, add the water and wine and continue to stir until the sauce thickens.
Place the cod in the oven 6-8 inches from the broiler. Broil on high for 10 minutes.
Meanwhile, use a hand blender to process the sauce until smooth. When the cod is ready, transfer the fish unto warm plates and return the cooking liquor from the fish to the sauce. Process one last time and serve the fish piping hot.
