Bread with Fresh Tomato and Olive Oil

Pan con Tomate y Aceite

The unadulterated flavour of tomato paired with good olive oil makes this recipe both sweet and savoury.  This recipe makes enough fresh for our family for breakfast.  If you are making bread with fresh tomato and olive oil for only 1 - 2 people, simply cut the tomato in half, rub it on a piece of baguette that has been cut lengthwise, drizzle with olive oil, season and eat.
This is my favourite breakfast.

4 large ripe tomatoes
4 Tablespoons of extra virgin olive oil*
2 baguettes, cut in 4 inch pieces and then in half lengthwise

Cut the tomatoes in half and grate them coarsely.  Flatten your hand as the tomato goes through the grater.  As you continue to grate, your hand will be protected by the tomato skin. 

Mix in the olive oil, stirring gently.  Serve with the bread either toasted or not.  Sprinkle with a little salt if desired.
